Garlic Lime Chicken Fajitas
I got the recipe from in front of the chicken. It is by McCormick. They always have the most flavorful recipes and my kids love them.
What you Need
Dry
1 tsp Minced Garlic
1 tsp Minced Onions
3/4 tsp Ground Cumin
3/4 Oregano Leaves
1/2 tsp Cilantro Leaves
1/2 tsp Coarse Black Pepper
1/2 tsp salt
Flour tortillas
2 tbsp olive oil
Fresh
1/4 cup Lime Juice
1/4 Cup OJ No PULP
1 medium onion chopped thinly
1 1/2 pounds chicken breast thinly sliced
1 medium green or red pepper thinly sliced we used both
What to do
Mix juices, oil and all other spices and salt in a small bowl. Reserve 1/4 cup of mixture for later. Place chicken in large resealable plastic bag or glass dish. Add remaining marinade and coat well. refrigerate 30 minutes or longer for extra flavor. I did an hour.
Cook and stir chicken in large heated skillet on medium high heat 3 minutes or until lightly browned. Remove from skillet and add bell peppers onion and reserved marinade and cook and stir for five minutes until tender. return chicken to skillet. cook 2 or 3 minutes until heated through
spoon chicken mixture into warm tortillas. serve with assorted toppings if desired.

WOW – this sounds delicious. I think I may just have to make it for my family. My kids are still SOOOO picky, but I think they actually might eat, and even….like…this. LOL.
